- 1 cup of quinoa
- 2 cups of water
- 1 cup of cherry tomatoes, halved
- 1 cucumber, diced
- ½ red onion, finely chopped
- ½ cup of Kalamata olives, pitted and halved
- ¼ cup of feta cheese, crumbled
- ¼ cup of fresh parsley, chopped
- 2 tablespoons of olive oil
- 1 lemon, juiced
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water until the water runs clear. In a medium saucepan, combine the quinoa and water and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes or until all the water is absorbed. Fluff with a fork and let it cool.
